THE STORY
It started with an argument. Two friends, a road trip through the Peloponnese, and a disagreement about what makes a perfect burger. Nikos wanted technique — the double smash, the lacey crust, the precise cheese melt timed to the second. Elena wanted soul: good produce, honest seasoning, something that tasted like someone’s grandmother was in the kitchen.
They were both right. ALIUKAMAN opened its first kitchen in 2019, tucked behind a flower market in the old quarter, and quickly became the kind of place where queues formed without anyone really trying. We use grass-fed beef blended daily, brioche buns from the bakery two streets over, and condiments made in-house each morning. Come hungry.
